Banana Oatmeal Crumb Cake

INGREDIENTS (Nutrition)

  • 1/2 cup butter, softened
  • 2/3 cup packed brown sugar
  • 2 eggs
  • 1 cup mashed bananas
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 1/3 cups rolled oats
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 cup rolled oats
  • 1/3 cup packed brown sugar
  • 2 tablespoons butter, melted
  • 2 tablespoons chopped walnuts
  • 1/2 teaspoon ground cinnamon

DIRECTIONS

  1. Stir together flour, 1 1/3 cups oats, salt, and baking soda.
  2. In a large bowl, cream 1/2 cup butter or margarine with 2/3 cup brown sugar. Beat in the eggs, then the bananas and vanilla. Beat the flour mixture into the banana mixture. Turn the batter into a greased and floured 8 inch square pan.
  3. Mix 3/4 cup oats, 1/3 cup brown sugar, melted butter or margarine, walnuts, and cinnamon together until crumbly. Sprinkle evenly over the top of the batter.
  4. Bake in preheated oven at 350 degrees F (175 degrees C) for 40 to 45 minutes, or until it tests done. Transfer to a rack to cool.

2 Pillsbury Crescent rolls
1 ½ (or up to 2)   8 oz pkgs. cream cheese (When I make it I do 16 oz. or a little less mayo)
2/3 cup mayonnaise
Dill weed optional
 
Chopped fresh vegetables (any you like): carrots, peppers, mushrooms, zucchini, tomatoes, broccoli, cauliflower, and especially green onions
 
Unroll crescent rolls, and press and join them together on a cookie sheet, or jelly roll pan, to make a large rectangle. If you have a jelly roll the dough will go to the edges. Bake 11 minutes and cool.
Mix cream cheese (softened to room temperature) with mayonnaise and spread on baked dough. Sprinkle with dill weed.  Top with any or all of the raw vegetables.
 
Refrigerate.  This is good made one day ahead.

Crust
1 box cake mix (I used spice, yellow is ok too)
1/2 c butter, melted
1 egg

Filling - note: I cut the amount of filling in half but here is what the recipe said:
3 cups pumpkin pie filling (I used plain pumpkin, not the pie filling)
2 eggs
2/3 c milk

Topping
1 c reserved cake mix
1/4 c sugar
1 tsp cinnamon
1/4 c butter, softened

1.  Grease bottom only of 9 x 13 pan.
2.  Reserve 1 cup cake mix for topping.
3.  Combine remaining cake mix, butter, & egg.
4.  Press into pan.
5.  Prepare filling; combine all ingredients until smooth.
6.  Pour over crust.
7.  Prepare topping; combine all ingredients (with manual pastry mixer if you have one).
8.  Sprinkle over filling.
9.  Bake at 350 for 45-50 minutes (until knife inserted near center comes out clean).
10. Top with whipped topping if desired.

This past week our speakers, Laura and Greg Rhodes, talked about many different ways to make books come alive.  One adventure that is coming to our own backyard is the LB Airport’s 85th anniversary celebration.  www.wingsoverlongbeach.com  has a lot of cool information but I have posted a summary thanks to Elaine M’s(the MOM who talked about trips she took as a little girl from books her dad had her read) findings…This would be great to have an airplane themed week or weekend of books and show and crafts…

Wings Over Long Beach Celebrates the Long Beach Airport’s 85th Anniversary &
U.S. Air Force Week

Join the celebration on Saturday, November 15 and Sunday, November 16 from 9 a.m. to 4 p.m. at the Long Beach Airport (enter at Wardlow Road & Cherry Avenue, near the Boeing C-17 facility). The static air show will host military and vintage aircraft for all to see, along with a Kids Zone and entertainment by the Air Force Band of the Golden West and the Air Force Honor Guard. This is a static display event, not an air show. Cost is only $5.00 (kids under 5 free!), with free parking. For more information visit:
